Recipes
Nuts are extremely versatile. You can use them in sauces,
stuffing in fowl, dessert toppings, cheese balls, various international
pastries, pasta dishes, cookies, cakes, and ice cream. Listed below are
our favorite recipes. If you have a nutty recipe you would like to share,

Candied Walnuts
Candied walnuts are easy to make, and add a delightfully sweet crunch
to any salad, dessert, or dish. Toss them with a spinach
salad that includes pears, mandarin oranges, and sliced red onions. Sprinkle
on vanilla ice cream and add chocolate syrup for a heavenly sundae. Blend
with apple-raisin chutney and serve with roast pork for a savory country
dish.
½ cup Malik Ranch’s raw, shelled walnuts
2 tbsp butter or margarine
1 tsp vanilla
2 tsp brown sugar
Dash of nutmeg, cinnamon (optional)
Melt butter in a frying pan on medium heat. Once butter
is melted, add walnuts. Stir until walnuts are thoroughly coated. Add
vanilla and brown sugar. Continue stirring until walnuts are crispy. Add
a dash of nutmeg and cinnamon and serve.
Avocado Salad with Shrimp and Pistachios
Dressing:
1/4 cup salad oil
1/4 cup white wine vinegar
1/4 tsp. salt
2 cloves garlic, minced
1/4 lb cooked, de-veined shrimp
Other ingredients:
2 large, ripe avocados
1/4 cup Malik Ranch's salted pistachios
Lettuce leaves for garnish
Make dressing by mixing all ingredients above. Cut up shrimp
for dressing, and save a few whole ones for garnish.
Halve two avocados and remove pits. Carefully scoop
out avocado (save shells) and cut into bite-sized pieces. Add to shrimp
mixture. Fill avocado shells with mixture, top each with a whole shrimp
or two and sprinkle with coarsely chopped, salted pistachios. Serve on
lettuce leaves to 4.
Cheese and Almond Appetizers
6 slices bacon, crisp and crumbled
1 loaf firm, whole wheat bread
8 oz. sharp, shredded cheddar cheese
1 small onion, minced
2-4 tbsp. Malik Ranch Dry Roasted Almonds, chopped
1 tsp. Worchestershire sauce
Salt and pepper to taste
1 cup mayonnaise
Cut crust off bread; cut each slice into 4. Mix remaining
ingredients and spread on bread squares. Bake at 400 for 10 minutes or
until bubbly.
